If you
really want a Pier visit then it should be doable, although it's certainly not as easy as just leaving the lounge and walking to the exit. You'll have to get a member of staff/security to escort you through to the arrivals level and immigration/customs.
If you decide to try it, then once you make it inside the Pier I would log-in to aa.com and cancel your reservation. When you're ready to leave, tell the lounge agents that your plans just changed, you've cancelled your onward flight and need to stay in HKG now. They should be able to guide you from there.
