Because for most people, being able to sleep is more important on a red-eye than a day flight.

It's certainly possible to get some form of sleep on those angled flats if you're tired enough, but you might have to deal with the sliding effect. Some people actually prefer sleeping at an angle (or even not in full-flat mode), so it boils down to personal preference. Also, if you're on the A/C/H/K seats you'll have to deal with the lack of direct aisle access.

But still, a lie-flat seat is way better than an angled-flat
