Some of the hotel highlights according to TripAdvisor:

A/C Not Working
Uncomfortable/Small hard bed
Inconsistent & Poor Restaraunt service
Poor Customer Service!
Lack of Hospitality
Basic Amenities (Towels, Hand Towels, Etc.)
Plumbing & Sanitary Toilet (ability to flush toilet paper & use toilet)
Rodents in the room
Ants, Roaches, horrible mosquitos and other bugs in room
BED BUGS!
Old & Rundown
Categories are based on average room rate so if a hotel can get a high price for a low quality property, room category will likely be on the high side. Based on my understanding, no minimum standards based on category.

We ended up finding a house between Tulum and Coba on VRBO for our 2 night stay. We almost always stick with Starwood, but this seemed like a good time to spread our wings a little.
