All of these carriers will be lie-flat across the water. Within Asia, the CA A330-300 is lie-flat. The A321 that they also fly PEK-HKG is not. The intra-Asia Asiana (OZ) and Thai (TG) flights will not be lie-flat; the Air India (AI) flight will be.
If lie flats were my #1 criterion, I'd fly OZ-AI and then either AI-OZ or Swiss (LX). The problem with CA is that they appear to be willing to cancel confirmed reservations, based on numerous reports in this thread. If you're willing to take that risk, make sure you select the A330 flights, not the A321s, and you will be lie-flat all the way.
Also, fair warning -- CA bans the use of cell phones in flight, even in airplane mode. Tablets are allowed, but phones are not.
