I guess my question is, when I'm touring around is it easy to get an Uber/Grab, or should I just pay for a guy to wait for us everywhere we want to go? I don't want a tour, I just want somebody there to take me to the places I want to go.
The waiting time is fairly cheap ($3 an hour, if I recall correctly). If in a more remote location, I'd certainly have them wait.

Be careful with keys, glasses, water bottles and plastic bags at Uluwatu. The monkeys are pretty naughty there.
