I seem to recall that a 744 was used LAX - SFO when a particular nasty storm hit SF and the ATC posted delays were 3+ hours. UA cancelled a flight and substituted another with a 744. I believe it went out completely full.

So, it happens? Not sure if you could 'predict' when though
