Polaris has lunched to much fanfare, but they have yet to put the actual seats on a plane. Thus far you still get the same old UA J seat in a horrible 2-4-2 config, but you do get Saks Fifth Ave pillows and revamped food offerings. I believe it's mid-2017 when we'll see the actual seats on a plane but even then it's on very limited routes (SFO-HKG for example) and certainly not systemwide.

Even SYD is 787s now.
One thing I would avoid is having to connect to a domestic within Australia. After a long flight, this is the last thing one wants to do.
So either just fly YYZ-LAX-MEL or YYZ-LAX/SFO-AKL-MEL
Keep in mind most of Air NZ's flights will not be flat beds from AKL onwards, make sure you get the 777 flight.
