That is exactly what happened to QR this year due to very severe delays in deliveries of new aircraft.
You are quite right, except EK only has A380 and B777 left.

Among A380 there are 2 class and 3 class birds. Among 3 class bird there are few small differences but small enough to ignore if you need to substitute aircrafts (a difference of 28 Y seats but same number of J/F seats and no difference in seats design).

The B777 fleet is somewhat complicates.
The odd ball of B777-300: only 10 of them and they will be gone very soon, that would only leave EK with B777-200LR and B777-300ER.

There are 2 types of B777-300ER, with 8F or without F. But if you look at the B777-200LR and B777-300ER with F, the F/J numbers are exactly the same and the seats are the same. So they can offload few Y passengers if they needed to without affecting the F/J crowed. Plus the non-F birds have exactly 42 J seats like other B777s.

However, the story is entirely different in QR...
