I've used ApplePay with charges hitting my US Amex cards at LHR retailers, including the landside M&S Simply Foods at LHR T5. It processed as well or better than when I use the physical Amex cards at the very same retailers at LHR.

I didn't try ApplePay-linked-to-US-Amex for the London Underground. Even if contactless is cheaper than Oyster for some of my visits using the Tube, I'd rather have my phone not "out there" like my Oyster cards when using the Tube.
