Getting the appropriate equipment may be a problem, not sure. But the bigger issue is that a real deep dish (which most of us Chicagoans don't normally eat), take about 30-45 minutes to cook and requires a fork, and I'm guessing that's the part where an airport doesn't make as much sense...for the most part it's not a fast-serve, on-the-go product.
