Where as in the club, they have more space for storage, soda gun systems, etc. that aircraft don't have.
The reason Club Soda is catered is that it is used both in cocktails and as a standalone beverage. It's versatile. I mean, I'd love it if they carried 6 flavors of LaCroix but it isn't going to happen. They keep their inventory down by carrying the most common products, which saves weight, which saves fuel, which saves money.
