You can theoretically use Ultimate Rewards points on any airline by redeeming them for a paid ticket at 1.25 cents/point, but that's likely to be an exceptionally bad value for an international one-way ticket (since one-ways are generally *very* expensive)
As an example, a quick check of prices for LAX-SYD shows the following redemption rates for economy tickets (milez.biz is a good resource). Note that this will of course be subject to availability, and doesn't necessarily mean you will be flying on the airline who the miles belong to:
- Air France/KLM Flying Blue (Skyteam): 50k per person
- British Airways Avios (Oneworld): 50k per person (nonstop on Qantas or American)
- Singapore Krisflyer (Star Alliance): 50k-55k per person
- United MileagePlus (Star Alliance): 40k per person
- Virgin Atlantic: 47k-50k per person
