Absolutely! They simply canīt hold the fish for a few days. If they donīt have fresh fish, they canīt serve fish. I think itīs this simple. If I wonna eat "fishy" fish I can buy at the supermarket (perhaps with reduced price) or eat at a mediocre but hopefully cheap restaurant. If I would be the tester and get fishy fish they could say god bye to their stars....
