Ming Court is a real favourite of mine. It is not cheap but I think it takes Cantonese cuisine to a level of refinement rarely found in many cities around the world and dare I say it, in Hong Kong itself.

Probably not the best for a solo diner though as you won't get to try out as much as you otherwise would.
