AFAIK once the size of the cabin is determined by them, it isn't often changed during customer acceptance and check-in period (effectively T-48). If changes are necessary, they will do it with op-ups.
Moving the curtain is a trivial operation that I've seen some Finnair FAs perform even during boarding/taxiing (though I'm sure that was not the normal procedure).
And for every row converted from J to Y, two seats are gained. That's the most efficient way to resolve overbooking, so long as it does not require op-downs.
