This suggests, then, that you are flying CW or F, and as you have found out ICN is not included in the list yet. But even so, if you look at the main course pre-order thread (
link) you will see that you only have the choice to pre-book the standard main courses. There will usually be a vegetarian starter and main (though not always) but they are usually not vegan. Therefore, there is no choice for your travel companion than to order the vegan special meal and take extra food themselves that complies with their dietary requirements.
Told me to speak to cabin crew
This is also true, once you are on-board the cabin crew will have paperwork detailing the 'usual' food allergy and intolerances, as per UK legislation. But obviously, that means you won't know whether any part of the meals are suitable until you get on board.
Like Wembleygirl said, tofu and rice are often served as vegan and vegetarian dishes, especially flying east. But you specifically mention fruit and often the salads / couscous will contain some fruit. Edited to say, cabin crew are usually very helpful if you let them know when you board about the allergens, they can serve parts of the meals, discard dressings and keep some snacks to one side.
