Are there any indicators of who has Level 3 processing?
I know I said I don't MS with Amex, but I just picked up the SPG and it's too tempting... There's no way the card would be beneficial to me without a little MS. I suppose if you find a place that isn't reporting what you buy, your account is a little safer.
Visa can show level 3 merchants.

Other way is manually checking your credit card transaction history to see if your purchased items show up, but this depends on the issuer sharing this information with you.
