I think free dining cert should be 50 & 100 USD for Premier and Plat (i.e. the other way round)
One other key benefit is Fairmont Premier and Plat can use Fairmont Fit (free provision of gym gear, including socks).
Airmiles is subjected to very obscure rules that I have received it less than half the time, that I think it is better with an "*".
(as you will not get your miles most of the time - and I speak both as a Fairmont Plat and Swissotel Eleva)
Perhaps U can include Swissotel Eleva (as Fairmont stays can count towards Eleva qualification - but their highest tier Swissotel Zenith - can only be achieved via pure Swissotel stays. ).
However, the cross-benefits of Fairmont Plat for stays in Swissotels or Elevas in Fairmonts, are really minimal.
