I'm pretty sure that the 788 has the ex3 system too, although it may be an earlier version, because of the delays from Boeing delivering the 788s. From what I can tell, the ex2 is an older type screen, that is not as flush to the seat (with the brightness buttons and is more rounded - the system on UA's 772s).
You have jogged my memory. I remember now talking to a Panasonic avionics guy from my Toronto Halifax flight on the 788. Yes, I believe you are correct, the 788 should be the EX3, however, I'm sure it's running an older version of the software due to the lack of the 3d maps and such.
