Welcome to Flyertalk.
Indeed, much of the information about App-o-ramas is dated now. The bank risk underwriting has stepped up and, mostly, this results in difficulty obtaining new cards, not shut downs. You are still fairly early into the game with 3 credit cards. Many of us have 10x that many open and active in the household. I think you're fine with a couple of apps, but don't rush out and max out the limits in the first billing cycle. That will mimic a financial crisis and may flag your account internally. HOWEVER- Shutdowns are really not that common.
So, pick a couple of nice cards that will help you achieve your travel goals. Not just a willy nilly fistful of cards that might not be helpful to your travel plans. Focus on a goal. It's a marathon, not a sprint.
