We did DFW-Seoul-SGN last year, I'm not a fan of Korean after that trip (had to beg for water, even in business! and they took water bottles away at boarding gates- bottles bought after security!) but it is only one connection, which is why I booked it originally.
FYI Their taking your water bottle after security (on your way back to the US presumably) is a USA-DHS-TSA mandated measure, so no matter which airline you booked, it would've happened... not KE's fault.
Your onboard service, however, sounds like it was lacking, which is a surprise to me.
