You should book for the day before arrival if you want to be sure of having a room, and communicating clearly with the hotel in advance of your proposed arrival plans.
If you do not do this, you risk the hotel listing you as a "no show" at midnight "turn" (or possibly even earlier) and your room being released by the hotel's "Room Controller" (or person fulfilling that function).
I did all of this recently for a very early arrival in Lima, Perú, to assure we had a room held for our arrival.
