Maybe add $100 (split with another person) for a guide to accompany you on Jiayang train excursion day to deal with the non-English speaking logistics. The other places don't really need a tour or a guide at all, even for the Mandarin non-speaker--they are well signed in English.

These tours have a lot of overhead and profit built into their pricing. And paying for a guide when not needed seems quite extravagant.
