You will never live up to Asian carrier quality if you go this route.
In the F sections of most Asian carriers' lounges it's waiter/ress service for bar items, not open bar. Unless the quality of the booze changes how would you consider this to be a degradation of quality? Maybe quantity but hardly quality. If anything, adding bartender is an enhancement of service. The standard in North America is bartender, and it's a feature of the new LHR lounge.
