Careful with this. Some international fares have a couple requirements that make this not possible. First, some require that any credit be used for another international itinerary AND/OR that the new ticket be a higher fare/fare class than the original purchase.
This is exactly why most international fares have the stipulation that the credit can only be used for an equal or higher fare. So that it cannot be broken in to multiple tickets.
