Or will there always be a veg option on EK first class and I don't have to worry?

You can actually get the menu ahead of time as someone has posted it above
If you go to the website and "What's on my flight" on the right hand side, input your flight details for menus and wine lists etc.
In F I wouldn't worry - order the special meal, eat the main menu. Not a problem. EK generally over-cater and don't run out of meals.
