Same way the AC staff does. Manually extend the footrest and reach way back in for the switch. Using your phone flashlight helps find it. I simply find it quicker to do it myself. On on HKG flight I reset 3 different seats (I feel bad seeing the female FA's down on their knees when they are wearing skirts).
