For anyone who enjoys leftover pasta eaten cold... Good news! The carbs turn into "resistant starch" which the body treats as fibre. Leftover cold pasta is less fattening than when it was freshly made.
Can't abide cold pasta and need to reheat it? Even better news! The pasta becomes even less fattening.

Not sure if this applies to rice also, if so it's an appealing thought that leftover rice (fried rice) and risotto (arancini and butter fried risotto "cakes") are less fattening or not more fattening (considering the extra oil/fat that is added) than the original rice dish.
