I think this is in reference to defrosting the turkey in the sink. It's not a cooking method. So if your turkey is already defrosted ignore this.

I wouldn't recommend cooking the stuffing in the turkey. It's much better if you cook it in a casserole dish on the side. Agree it's too mushy and potentially unsafe if undercooked when actually stuffed in the turkey.

Cooking breast down is the easiest and best way to cook a turkey.
Also use lots of butter!
