Yes, I pay online from my bank account and you can send as much or as little as you want so you could still overpay that way.

£1k sound unusually low for Amex. I think I was a student & employed during the holidays when I first got an Amex card and I am sure the limit was at least £3k or so. With a mean UK salary I would think a limit of £5k would be typical.
