Come in when it's really busy and make a small scene and tell them that they are violating their contract with visa/ mastercard.
'Cash only' policy may prevent retail fraud which is miniscule compared to online fraud (advance in tech.), but (1) it encourages money laundering activity (street drugs are cash only) and (2) also discourages their target 'under banked' customer because their paycheck needs to be cashed!

If 'cash only' is not the corporate policy, but individual store/manager policy then it is our social responsibility to call out such business practices and have some voice in neighborhood business to run responsibly, keeping the drug dealers and money launderers out of our communities, cities, states and the country, for our grand kids!

Bancorp ended paying $1.3 billion fine to the justice dept. for the charges of money laundering activities not too long ago. Bancorp could not track the source of cash (how can they?) all CC payment has the data trail and the footprint.

I am not suggesting to scream at the cashier nor walk out like a lamb! The lies and misconceptions needs to be cleared and every store must have consistent, uniform and defined policies. The cashiers and managers must stop acting like owners! they work for the shareholders and serve our communities.
