For short haul in Europe there really isn't much in it. You will sit in a similar seat, with similar pitch.
On full service you will get a drink and packet of nibbles included. You may get a sandwich.
On low cost you will have to buy drinks, but you will have a greater choice of food if you're hungry.
I would choose on price, schedule and location of airports.
