Pakora are known as bhajiya also ...veggies dipped in batter and deep fried. Served with hot and sweet chutneys.

PS You should be able to buy panipuri kits in UK (more stores carry that than Fish and Chips )

As suspect as the tamarind-water mixture was, I enjoyed
pani puri (aka puchka) in Dhaka a few years ago.
Is that something found all over India? I don't recall.
