Talk about mussels, made some last night..
Sautéed shallots/leeks/garlic and fennel.. added lemon/a tiny amount of chicken stock and white wine.. then dumped the mussels.. very very good.
Mrs Willie & I adore fennel but for some reason I rarely think to use when preparing mussels. Nice.
Last night cooked dinner for my parents:
chick pea crackers w/ sweet/spicy chutney
homemade smoked Lake Trout fish dip
seeing as I had some leftover saffron mayo, I prepared the mussels again as an appetizer.
Squash soup w/red pepper coulis & dollop of lowfat yogurt
Grilled Pacific King salmon w/sesame Asian glaze
