I was just going to write the same thing. Went to a 3-star a couple of weeks ago that was nothing special, and a 1-star the week before that was really spectacular. Have a reservation at Osteria Francescana in a couple of weeks (3rd on the Pellegrino top 100) but it looks like it's been getting really flamed recently in online reviews. Definitely wondering how that's going to turn out.
