I don't believe any Hawaiian hotel allows late check out because so many of the flights back to the mainland are overnight, however, most (including Hilton Hawaiian Village) will allow you to use a 'hospitality room' for a half hour (or an hour?) to shower and change for the airport after spending the day by the pool or on the beach.
