I always presumed that it was a way to get some better utilization out of the birds. They generally always were coming/going from overseas. This gave them a way to get some more usage each day. Arrive EWR early morning. Take and afternoon trip to IAH, leave IAH early back to EWR and off to Europe for the overnight.

I've just gotten spoiled (over entitled:->) over the years.
