The current TOS state:
If your account is not open for at least 3 months, Hyatt and Chase reserve the right to deduct the Free Night Awards from your Hyatt Gold Passport account.
I don't know if that means that they can charge you for the rooms if you have already used them...but there's really no reason to not just keep the card until its time to renew the annual fee. You might even get lucky and get a free Anniversary Night out of the deal before you cancel.
