The only way I'd do it is by having the Captain announce it on the PA as part of the flight briefing.
There really isnt anything special about flying for us frequent flyers; but I can understand the appeal for someone who does not travel much and might make for a good memory.
Have the Purser pass a note to the Captain, and find a way to have some Champagne available OB by calling ahead to the airline.
