Staying near the airport is of course the easiest if you have an early morning flight. Deciding on then having dinner in downtown Frankfurt or in Mainz really depends on what you feel like doing, seeing and eating. Both will require a similar transit time so that shouldn't be too much of a factor in deciding.

Unsure of when you are planning on staying but Club Carlson is having a great promo right now so I would also consider staying at the Park Inn Frankfurt airport to earn the 44k Club Clarlson bonus points for the stay. Rates should be significantly better than either of the Hilton options (or the Sheraton for that matter). Only negative to the Park Inn is that it is NOT attached to the airport like the other hotels but it is a short shuttle ride away.
