Yes, as long as one night of the stay is within the promotion period, double or triple bonus Starpoints will be earned on every night during the entire stay (even if part of the stay falls outside the promo window).

Thanks. I looked at the T & C link in your OP but did not see the FAQ link. The thread here that I found from links in the informational sticky about what year counts for stays and nights over NYE wasn't explicit about whether the same rules apply to promotions.
