Makes sense that one who's spent time working in a restaurant would be uninterested in touring the kitchen, but I've often found it interesting and a pleasure to tour kitchens of Michelin starred restaurants. It's a lovely chance to meet the people behind your food and see how a high-end restaurant kitchen performs.

My favorite kitchen tour has been of Eleven Madison Park. Great people to chat with and you may even have a neat little drink made for you. Per Se's kitchen is cool too, and I'd love to see the French Laundry's in person.
