I don't think this is true. They make you take all shoes, watches, jewelry, and belts off at BKK, yet they still have gate check for US-bound flights.

That is correct.

AFAIK there's no restriction on liquid in hand luggage on Japanese domestic flights.
If you do international-to-international connection, you have to go through security check again.
