Gotcha.. It may be a cultural food preference.. regions close to the southern border..
It fills a need too, whataburger, jack in the box and crapplebees get old. (denny's,ihop, skillet, wafflehouse, etc as well)
There are lunch trucks as well, but they target industrial park (where I often am), and try to get the factory workers leaving for lunch.
