Also, if your TA has your PNR on the screen, availability disappears too.
Seems this is not unique to EK. Same thing happened to me with EY.
This is called married segment logic and is present on most (all?) carriers. Basically, if a passenger is flying from AAA-BBB-CCC, the availability is often different than for passengers just flying AAA-BBB or BBB-CCC for whatever reasons.
