This is true to an extent... but I'm also far less likely to be interested in that kind of meal at 9 a.m.
My most expensive meal ever was
lunch at a 3* Michelin restaurant ... but they serve pretty much that exact same meal during evening hours for 2 1/2 times the cost. So you can't completely discount that "time of day" contributes to perceived value.
