A couple of comments:

1. For the Chase Sapphire, you would have to transfer the 50k points over to Hyatt to be redeemed for the free nights while the Hyatt card itself gives you 2 free nights that expire one year after they are issued. Since you are not Diamond, Sapphire is probably better since you have flexibility with usage of the points (not to mention that the Park Hyatt Paris is 22k points per night, so you'd have 8k leftover). Note there is no guaranteed availability for the award nights with either card (or points), there must be a base entry room (at this property Park Queen) available for sale in order for you to redeem (doesn't matter even if you're Diamond). 4 nights is possible but you may have to book what's available and keep checking back for the one(s) that aren't available right away.

2. It's been reported that Chase doesn't like to give out new credit cards to customers who got one from them less than 6 months earlier (so you might have to get your wife to get a card in this case). Don't think the checking / savings bonus has any effect on credit cards.
