BTW, Anyone know what happens at immigration for in-transit passenger AMS>YYZ>JFK? When I fly YYZ>DCA I do customs on the Canadian side. I've never made a Canadian connection on the way in from Europe.
If you are not staying in Canada you do not processed through Canadian customs. You will follow the signs for US connections and go through US Customs & Immigration only. However, if you have a long layover or plan on staying in YYZ for any amount of time you will need to clear Canadian customs.
