Stopovers are irrelevant in NA as you are not originating there. However, I count seven segments unless CX begins direct flights from ORD to HKG via SFO.
1: ORD-DFW
2: DFW-ORD
3: ORD-MIA
4: MIA-PTY
5: PTY-MIA
6: MIA-ORD
7: ORD-SFO
If you do not need to return to ORD after PTY you could use the 6th segment to go MIA-LAX or MIA-SFO and then connect to CX to HKG.
