It seems there is some debate over the EC Bulkheads, but I suspect I'll avoid it since my spouse doesn't like reduced seat width.

Also, the consensus seems to be that the booking C & E seats (with the hope of scoring an empty middle seat) is a bad strategy, as the GAs will likely fill them.

If anyone has any further guidance, I'd love to hear it!
